Crack the egg into a bowl and beat with a fork. Season with salt, pepper, or garlic powder.
Preheat a medium skillet over medium heat. Spray the pan well with nonstick cooking spray.
Pour the beaten egg into the skillet. Swirl the egg around the skillet to create an even layer over the bottom of the pan.
Cook the egg until it is just about set. This takes just about a minute. Use the spatula to pull the egg away from the sides of the pan. Flip the egg over and cook for a few more seconds, about 10 seconds, until the egg is completely cooked.
Remove the egg from the pan and move it to the plate. Add in the fillings and fold the egg wrap tortilla.
