    In a small bowl, mix together garlic powder, onion powder, and chili powder until combined. Sprinkle this blend over each chicken breast, making sure to rub it in well. Add a pinch of salt and black pepper to taste. Set the chicken aside for now.

    Switch your Instant Pot® to the “Sauté” setting and pour in a tablespoon of olive oil. Once the oil is hot, lay the seasoned chicken breasts in the pot. Let them brown for 2 to 3 minutes on each side. If the pot gets crowded, work in batches and add a little more oil as needed. When the chicken is browned, transfer it to a plate and put it aside.

    Add the rest of the olive oil to the pot, along with your sliced Portobello mushrooms. Sprinkle them with a little salt and black pepper. Cook the mushrooms, stirring every so often, until they turn a rich golden brown—about 4 to 5 minutes.

    Pour in chicken broth and use a wooden spoon to scrape up all those tasty brown bits from the bottom of the pot. Those bits bring extra flavor!

    Turn off the sauté function, then place the chicken back in with the mushrooms. Secure the lid and move the vent to “Sealing.” Set the pot to “Manual” and cook for 3 minutes.

    When time’s up, let the pressure naturally release for 5 minutes, then open the valve to let out any leftover steam.

    Before you add the cream, you’ll want to temper it. Scoop a bit of the hot liquid from the pot and stir it into the heavy cream. Then you can add the cream to the pot without worrying about it curdling. Stir to bring everything together.

    Ingredients
      

    • 2 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp chili powder
    • 1 tsp paprika
    • 2 lbs. chicken breasts butterflied
    • Sea salt and black pepper to taste
    • 1 Tbsp extra virgin olive oil divided
    • 10 oz. baby Portobello mushrooms sliced
    • ½ cup chicken broth preferably organic
    • ¾ cup fat free half and half
    • 2 Tbsp fresh parsley finely chopped

    Instructions
     

    • Combine garlic powder, onion powder, and chili powder in a small bowl and stir to combine. Rub spice mixture into each butterflied chicken breast and season with salt and black pepper, to taste. Set aside.
    • Select the “Sauté” function on the Instant Pot® and add one tablespoon olive oil once hot. Add seasoned chicken breasts and brown on each side, approximately 2-3 minutes per side. (Work in batches, if necessary, adding more olive oil as necessary). Transfer chicken to a plate and set aside.
    • Add remaining olive oil to Instant Pot®, along with sliced Portobello mushrooms. Season with salt and black pepper, to taste. Cook, stirring occasionally, until mushrooms develop a nice golden brown color, approximately 4-5 minutes.
    • Pour in chicken broth and gently deglaze the bottom of the pot, scraping up any brown bits from the bottom with a wooden spoon in the process.
    • Turn unit off and return chicken to the pot. Add lid and lock into place. Position the vent to “Sealing” and set the “Manual” setting to 3 minutes.
    • When cook time is complete, allow pressure to release naturally for 5 minutes, then manually release any remaining pressure.
    • To prevent curdling, temper the heavy cream by adding a small amount of the hot cooking liquid to it before stirring it directly into the pot. Stir to combine.
    • Serve immediately with some of the creamy sauce spooned over the chicken and mushrooms. Enjoy!
