Raspberry Oatmeal Bars

These Raspberry Oatmeal Bars are the perfect way to start your day! Made with wholesome ingredients like oats and raspberries, these bars are a delicious breakfast or snack. Ingredients
  

  • 2 cups old-fashioned oats
  • 2 cups whole wheat flour
  • 1 tsp cinnamon
  • 5 tablespoon lite unsalted butter softened
  • ½ tsp salt
  • 1 tsp vanilla extract
  • cup sugar substitute

Filling

  • 4 cups raspberries fresh or frozen
  • cup sugar substitute
  • 2 tsp lemon juice
  • cup corn starch

Instructions
 

  • Preheat the oven to 325 degrees and gather the ingredients.
  • Place flour and the oats in a bowl with the cinnamon, butter, salt, vanilla and the sugar substitute. Using a mix, combine for 1 minute on low.
  • Scrape the bowl down and mix it again on medium for 2 minutes.
  • Take 2/3 of the oat mixture and spread it into a 9 *13 inch baking dish. Press it down to form the crust. Set the rest aside to use as the topping.
  • Make the filling by combining raspberries, sugar substitute, lemon juice and corn starch together until it is uniform.
  • Spread the filling over the crust.
  • Add the topping over the filling.
  • Bake for 35-40 minutes until golden brown.
