In a mixing bowl, combine the flour and oats with cinnamon, butter, salt, vanilla and sugar substitute. Press two-thirds of the dough crumb mixture into the prepared baking dish to make the bottom layer.
Combine the raspberries, sugar substitute, lemon juice and corn starch. Spread over the crust. Add the rest of the oats as crumble topping. Bake raspberry bars until golden brown.
Hint: Use parchment paper on the bottom of the baking pan to make clean up easier. It will also make it easier to remove the bars.

There are many ways that you change up these oatmeal fruit bars. Some easy variations are
- Adding dried cranberries, almonds or even coconut to the top instead of the Raspberry jam in the center.
- You can also vary the fruit - I'm thinking peaches and apples would be amazing with this crust as well! If Raspberry isn't your thing. Blackberry seems like a natural fit for an oatmeal bar recipe too.
- Sugar free chocolate chips, or dark chocolate chips, would be a great addition. You can even use sugar free white chocolate chips too.

This is a great afternoon snack or dessert. I love to serve it with a scoop of ice cream. Because I want to keep it low points. I use homemade WW Vanilla Bean Raspberry Ice Cream. It will also work as a special brunch recipe too. But you can't forget breakfast and and dinner. Try serving these recipes:
🍶 Storage
The raspberry filling might migrate into the rest of the bar if left out too long. If this happens, just push it back down into the crust mixture and try to smooth it over as much as possible to cover any holes, if you are worried about them looking pretty. Otherwise, just eat like normal.
Storing: These will stay fresh and flavorful for about 2-3 days if stored in an airtight container. For best results, place them in a refrigerator or freezer after they have cooled. Just remove them from the fridge about 10 minutes before you're ready to eat one so that they can soften up.
Freezer Storage: These are best when eaten within a few days of being made. They freeze very well. The bars can be frozen for up to 2 months and thawed in the refrigerator. Allow the fruit granola bars to cool completely (this takes 45 minutes in the fridge). Once they're cool, wrap them individually in plastic wrap or a cooling mat and stick them in a freezer bag. They will last about 2 months frozen, but who can wait that long?
Thawing: To thaw, just allow them to sit on your counter until they reach room temperature - this could take as little as 30 minutes if it's not too hot out or as much as an hour if it's very warm in your home when you take them out of the freezer. You can also microwave them for 10 seconds at a time until soft enough to eat.

If you are like me, you want to keep these bars on hand all the time for easy snacks or a simple grab and go breakfast. Divide the finished bars and store them in an airtight container or double the recipe and freeze half.

Use ripe berries: Using ripe berries will give you the best flavor. It makes the jam sweet and combines perfectly with the streusel topping.
Using brown sugar: Brown sugar has a delightfully warm flavor, but it also gives baked goods a chewier texture that any granulated sugar will. However, when substituting brown sugar for white sugar in recipes like this one, your baking time may vary slightly.
In general, you'll want to reduce your oven temperature by 25 degrees Fahrenheit if using brown sugar. This will also change the calorie count. You can use a brown sugar baking substitute to keep it about the same, just make sure it is a sugar substitute that is 0 points, and it does not do a half and half mixture. If it is, just recalculate the points. If you use anything other than a typical one to one sweetener, just be sure to make sure it is not too sweet.

How Many Points in Baked Oatmeal Bars on Weight Watchers
These bars are made with lite butter and sugar substitute. When you follow the recipe, you will get 16 bars. You can cut them larger or smaller. You can also easily cut them into 24 bars, which gives you more for the recipe and will also reduce the amount of points per bar. Since I want to biggest oat bar I can get for minimal points, I like to cut mine into 16. I will include points for cutting these into 12, 16 servings and 24 servings.

Raspberry Oatmeal Bars
Ingredients
- 2 cups old-fashioned oats
- 2 cups whole wheat flour
- 1 tsp cinnamon
- 5 tablespoon lite unsalted butter softened
- ½ tsp salt
- 1 tsp vanilla extract
- ⅓ cup sugar substitute
Filling
- 4 cups raspberries fresh or frozen
- ⅓ cup sugar substitute
- 2 tsp lemon juice
- ⅓ cup corn starch
Instructions
- Preheat the oven to 325 degrees and gather the ingredients.
- Place flour and the oats in a bowl with the cinnamon, butter, salt, vanilla and the sugar substitute. Using a mix, combine for 1 minute on low.
- Scrape the bowl down and mix it again on medium for 2 minutes.
- Take 2/3 of the oat mixture and spread it into a 9 *13 inch baking dish. Press it down to form the crust. Set the rest aside to use as the topping.
- Make the filling by combining raspberries, sugar substitute, lemon juice and corn starch together until it is uniform.
- Spread the filling over the crust.
- Add the topping over the filling.
- Bake for 35-40 minutes until golden brown.
