Preheat the oven to 300 degrees. Prep the baking sheet with parchment paper.
In a large mixing bowl, mix the oats, brown sugar substitute, almonds, cinnamon and salt.
In a small bowl that is microwave safe, melt the peanut butter, then add the syrup and vanilla together. Whisk well.
In another bowl, beat together the egg whites until it becomes foamy.
Add the egg whites to the peanut butter mixture. Drizzle egg mixture over the oat mixture. Stir well.
Pour the granola mixture on the baking sheet in an even layer. Use a spoon or spatula to pack it together.
Bake for 30 minutes. It should be golden brown and crispy.
Let it cool and break it into clumps.
Store the granola in an airtight container. Use about 1/4 cup granola per parfait.
To make the parfaits, alternate layers of alternate layers of greek yogurt, granola, sliced bananas, and fresh strawberries in 4 parfait dishes or mason jars. Enjoy!
