Make the granola: Prep the baking sheet with a piece of parchment paper. In a large mixing bowl, combine the oats, brown sugar substitute, almonds, cinnamon and salt.
In a medium bowl, melt the peanut butter. Add the syrup and vanilla and whisk well. Use another bowl to beat the egg whites until it starts to get foamy. Add the egg white mixture to the peanut butter mixture. Then drizzle the mixture over the oat mixture and stir well.
Pour the granola mixture on the prepared baking dish in an even layer and pack it lightly with a spoon. Bake for 30 minutes in a preheated oven until golden brown. Break into large clumps. Store in an airtight container.
To Make the Parfaits: Alternate layers of alternate layers of greek yogurt, granola, banana slices, and fresh strawberry slices in 4 parfait glasses or mason jars. Garnish top of each parfait with more fruit, whipped cream or more granola. Enjoy!

Strawberry Banana Parfaits with Homemade Granola
Ingredients
- 4 cups old-fashioned or quick cooking oats
- 5 Tbsp sliced almonds
- ½ tsp ground cinnamon
- 1 tsp vanilla or almond extract
- ¼ tsp salt
- 5 Tbsp Lite Peanut Butter Better’n Peanut Butter Peanut Butter, American Dream Nut Butter or Land O’ Lakes light butter
- 4 Tbsp sugar free maple syrup
- 2 tbsp brown sugar substitute
- 1 egg white
- 2 cups Greek yogurt
- 2 large bananas sliced
- 1 cup fresh strawberries sliced
Instructions
- Preheat the oven to 300 degrees. Prep the baking sheet with parchment paper.
- In a large mixing bowl, mix the oats, brown sugar substitute, almonds, cinnamon and salt.
- In a small bowl that is microwave safe, melt the peanut butter, then add the syrup and vanilla together. Whisk well.
- In another bowl, beat together the egg whites until it becomes foamy.
- Add the egg whites to the peanut butter mixture. Drizzle egg mixture over the oat mixture. Stir well.
- Pour the granola mixture on the baking sheet in an even layer. Use a spoon or spatula to pack it together.
- Bake for 30 minutes. It should be golden brown and crispy.
- Let it cool and break it into clumps.
- Store the granola in an airtight container. Use about 1/4 cup granola per parfait.
