You always want to start your morning off with a good breakfast. This Weight Watchers Breakfast Sandwiches is the way to go. These are simple and easy sandwiches that can be made and stored to eat for the whole week.
These Biscuit sandwiches are so good, so you will not get tired of them. This recipe has a short list of ingredients to make the biscuit dough and some ingredients are already pre-cooked for an easier time making these.
This is a great recipe to enjoy with family or to have an easy microwavable breakfast on the go.

🥫Storage
Refrigerator: They will last up to seven days in the fridge. Wrap the breakfast sandwiches in foil so they stay fresh in the fridge. Be sure when you reheat the sandwiches, if you are using the microwave, remove the foil first.
Freezer: You will want to wrap the biscuits in foil before placing them into a freezer-safe plastic bag. They will stay good for up to two months.
To Reheat: Let them thaw out in the refrigerator overnight. Remove the foil and wrap them in a damp paper towel. Place them in the microwave and reheat for 30 seconds. Check to see if they are heated through. If not, put back into the microwave to cook for an additional 15 seconds.

Weight Watchers Breakfast Sandwiches
Equipment

- large skillet (non-stick)

Ingredients
- 2 cups self rising flour
- 2 cup fat free Greek yogurt
- ½ teaspoon Kosher salt
- ½ tsp garlic powder
- 7 large eggs
- 2 ounces fully cooked bacon
- 4 Slices reduced fat American Cheese
Instructions
- Preheat the oven to 400° .
- Prepare your baking sheet by either lightly spraying with your favorite non-stick spray or line with parchment paper or a silicone mat and set aside.
Dough
- In a large bowl, add in the flour, salt, garlic powder, and yogurt. Mix together until all of the ingredients are combined together. The sides of the bowl will be clean too.
- Place the dough on a floured surface. Pat out the dough with your hands until it's about ½ inch thick.
- Lightly spray a biscuit cutter with a cooking spray that's non-stick. Cut out the biscuits. You will have 9 biscuits.
- Place the biscuits 2 inches apart on the cookie sheet.
- Place the baking sheet in the oven and bake for 19 minutes. Start checking the biscuits at this point since all ovens bake differently. If they aren't done, but back into the oven at 2-minute increments. You want them golden brown on top.
Making the Components
- In a medium-sized bowl, add in the eggs and a finger pinch of kosher salt and ground black pepper (if you want). Whisk together until everything is combined.
- Lightly spray a large skillet with your favorite cooking spray. Add the eggs and slowly cook on low heat. You will want to cook the eggs until the edges are done. Then using a spatula, flip them over. Let the eggs finishing cooking until they are done.
- If you would like the eggs the same shape as the biscuits, use your biscuit cutter and cut out eggs into circles. Then lay 1/2 of a slice of cheese on top of the egg.
- Prepare your pre-cooked bacon as directed on the box. Then remove the bacon from the microwave and let it rest on paper towels. You want the bacon crisp, not chewy.
- Using a sharp knife, cut a biscuit in half. Then assemble your sandwich by placing a cheesy topped egg to the bottom biscuit, then add one strip of bacon, then place the top of the biscuit on top.
