Peel the bananas and then cut them in half. Put a popsicle stick in the bottom of the banana. Push it in about one inch.
Place chocolate in a small microwave-safe bowl. Melt the chocolate in the microwave for 1 minute and then stir. Heat in 30-second increments, stirring between each time. Next, mix in the coconut oil and let it melt.
Dip the banana in the bowl of chocolate and let the excess chocolate drip off. Set aside on a cookie sheet covered with parchment paper.
Top the chocolate-dipped bananas with sprinkles, or any toppings you like.
Eat as chocolate-covered bananas or store them in the freezer as frozen chocolate pops.
I am making these as chocolate banana pops. You can also make them as frozen chocolate covered banana bites. Instead of placing the bananas on sticks, cut them into slices. Dip each slice of banana into the chocolate.
